At Cobbs, our beef is all grass-fed and locally sourced from Hampshire and Berkshire farms. We then hang and dry-age it for a minimum of 28 days in our special dry-aging room; this process improves the eating quality and flavour.

Wet aged vs. Dry-aged
These days, most beef is aged in plastic shrink-wrap; a process known as wet-aging. On the other hand, dry-aging is where it is exposed to air at a maintained temperature and humidity so that dehydration can further concentrate flavour and improve eating quality.


British Beef Week 2021


British Beef Week is an annual celebration (in its 11th year) where the industry comes together to champion British beef and the farmers who produce it. This year, the focus will be on the environment with an emphasis on what farmers do to make British beef highly sustainable.

The fantastic effort that our British farmers make in sustainable production practices on their farms is the reason why British beef continues to be the most sustainable in the world. Did you know that by 2040 British beef aims to be completely carbon neutral? (Source: Ladies in Beef)

Jilly Greed, who co-founded Ladies in Beef, explains why sustainability is so important:

“Great British Beef Week enables us to shine a light on all aspects of the beef production process. Our farmers are passionate about the beef they produce and are committed to delivering high-quality red meat for consumers to continue to enjoy.  

“Managing land in a sustainable way is a fundamental responsibility of the modern-day farmer. This includes farming regeneratively, improving grasslands and paddock grazing, planting trees, maintaining wildflowers for the bee population, or harvesting and giving cattle rainwater to drink. British beef production boasts a carbon footprint of just less than half the global average, and reflects the hugely important and positive work our farmers are putting in day-by-day.

It’s vital that we keep bringing attention to the ways our producers are respecting the land, whilst also producing the foods we enjoy eating.”
